Flamming Chicken Drumettes

Clean poultry or meat and drain excess water. Coat poutry with whipped egg, set aside for 15minutes.

Preheat cooking oil to 180ºC in a wok.

Then coat poultry with Fried Chicken flour and fry until golden brown.

Mix sauce ingredients in bowl and set aside: 50ml oyster sauce, 1 teaspoon dark sweet soy sauce & 1 tablespoon coarse black pepper.

Heat 2 tablespoons oil in wok, stir in sauce, and bring to boil. Coat fried chicken drumettes with the flaming sauce.
